I have a new obsession, well an enhanced new obsession. I love spicy food (as was blatantly pointed out during Jamaica night). I though the jerk chicken was spiced just right, others were sweating (and I mean a lot).
Rick Bayless is my new obsession. He is famous for his Mexican cuisine at Frontera Grill in Chicago and this week he won Top Chef Masters. I love how he uses chilis and fresh ingredients to make big bold flavors in seemingly everyday cuisine.
I am using him in my cooking inspiration. I bought two of his cookbooks today so I can learn some of his techniques. I'm a big fan of getting things off the internet, but sometimes you need to read and see technique in action.
